Easy Breakfast Sandwiches
With my son having early morning hockey practices before school breakfast on the go needs to happen! He needs to fuel himself for a hard skate as well prepare himself for a full day at school. So to save time in the mornings I made him breakfast sandwiches! All he needs to do is pop out of the freezer and into the microwave for 30-45 seconds and he has fuel for his day! Took No time at all to make them either! 🙂 Made breakfast today so instead of just the basic for the day I did a big batch! 1 time cooking and 5 more breakfasts! Win Win in my books!

Ingredients

  1. Preheat oven to 425
  2. spray grill pan with olive oil and line up bacon to cook. place in oven for about 15 minutes or until cooked to your liking!
  3. Beat eggs and egg whites together in a measure cup add salt and pepper.
  4. Spray muffin tin with olive oil and pour egg mixture into the cups. ( I like to add in chopped up spinach as well! )
  5. Bake in oven at 375 for about 20 minutes
  6. Toast muffins and add sliced cheese if using. Add 1 egg cup and 2 slices of bacon cut in 1/2
  7. To freeze I wrap them in parchment paper and then add a tight wrap with cling wrap!
